Holy Knight build that uses the Crusader's set from Skyrim Anniversary. Restoration, Heavy Armor, and Block are great for survival and crowd control. One-Handed is a solid and versatile melee skill. Undead especially fall to you hard thanks to Stendarr's Aura and other Sun spells.
A tanky, lawful good adventurer who makes use of Block, Restoration, One-Handed, Heavy Armor, Speech, and Smithing. Focuses on survival over raw offense, but hits plenty hard with sword and mace. Restoration spells keep the build alive and full of stamina for bashing and power attacking.
The Atronach Stone plus the Breton Dragonskin power make for excellent magic absorption in a pinch.

A Dawnguard Crusader sworn to defend Skyrim from the undead. Guided by the Divines and hardened by war, he wields steel and Restoration magic in equal measure, bringing righteous fire to vampires, draugr, and the creatures of darkness. He walks Skyrim alone, clad in heavy armor and carrying Dawnbreaker, the Meridia-forged blade that burns with the light of dawn. Against dragons, Daedra, and ancient evils, he stands as a shield against the night of Skyrim.
Solid build I use on Legendary difficulty + Survival + Permadeath
This is a min-maxing build. Every single perk, power and equipment is carefully chosen to create this build. Highest damage that a single hit can cause and highest defence and hp possible on the lowest level. It was built with USSEP patch active. No Creation Club content used, only free AE upgrades.

The Fishing Creation is required for this build, but substitutions can be made if you don't mind missing out of the roleplaying aspect.
Breton inspired by the Vigilants of Stendarr but not afraid to use and deal with deadra if necessary.
Based off of Ysgramor and old Nords who did not judge or shun magic. Frost destruction, restoration for hewling and alteration for added protection. Wears light armor and wields twohanded weapons like a traditional barbarian. Join and finish the Companions and Dawngaurd. Joins the college of winterhold for access to spells, but does not become archmage (roleplay).
Sword in one hand, torch in the other, this scoundrel creeps though tombs searching for forgotten treasures.
The first build I ever published on The Skyforge. It's a bit rough, but a fun playthrough.
